Keep Running

I’ve been so busy! The last two weeks have been non stop and I love it.
It’s really what I’ve needed. New job. New faces.
Fido is going to be a perfect fit for me. I have really enjoyed it so far.
It’s pulling me away from the idea of writing everyday but I hope to write more once I’m settled in more.

Beach Houses and Apple Cinnamon Coffee Cake

Are two of my favorite things right now.

This album is going to be huge. I’m all about it and can’t wait to pick it up
on Jan. 26th. Hopefully on tour they do Nashville. That would be really cool. I haven’t been able to get to a really good show lately.

I’m excited for Keith to come back. Have someone really close to talk with with no expectations or effort to force out the right answers to make good impressions.
I’ve made friends here. I love my friends. But I miss having the ones who know me best a part of my life. This is when I need them most. But between choosing not to be there, adventuring across the world, or 350 miles a part it’s just not working out.

I’ve a real love for cooking.
I’ll go to culinary school later in life.
Fido is keeping me busy. I’m really enjoying it. It’s the most strenuous,
demanding thing I’ve ever done. I’m really happy there. I like everyone I work with.
It’s exciting being in an environment that is focused on quality and aware
of the intricacy of coffee. Which sounds like a ridiculous statement but once your aware of what coffee can taste like and all variables considered you are prepared a drink the brings out the best in the espresso and the best milk, using high quality additives it’ll bring things and what I’m doing into perspective.

I’m excited to work bar tomorrow and geek out in espresso talk.

Telekinesis

I’m quite the morning person these days.
I’ll be up by 7 regardless of what time I went to bed.
Starting the day with a walk and talk with the pup and my own mind.
Once we get to Blakemore the headphones go in and I’ll
stream NPR. Upon returning home Ellie follows me about the
house as I get my things ready for the day and make my
cheese, ham, green pepper and pineapple salsa omlet.
Once we’ve both had our breakfasts I’m out for the day
exploring, running errands or going to the coffee shops I like.

I work. I raise my dog. I meet people.
I spend a lot of time in thought.
I explore Nashville.
I work daily to define what it is I seem to be doing.

Bake Sales and The Icelandic

So I’m really excited to be participating in my first bake sale! And for such a great cause. It’s through my favorite coffee shop here in town, Crema. All proceeds are being donated to Partners In Health, which is so exciting considering this isn’t the first time I or my family have donated. Unfortunately I won’t be able to be there during the event to be at work that day, however I’m excited nevertheless. Also really excited about Sigur Ros frontman Jonsi going solo. I was unaware of this and although It’s warming in Nashville I think I still get in my winter time Sigur Ros indulging before the warm weather and melodramatic summertime Wilco rock sets in. Give it a listen over at NPR.

Today’s been a day I really just needed for myself. I’ve been at home all day working around the house and writing out some new plans (to share later, with myself really considering 3 people read this). Reguardless, I’ve been in the kitchen today and in my desire for Hot Spinach and Artichoke Dip but not wanting to go out, I used what I had on hand and crafted something that by far replaces my normal spinach artichoke recipe.

Internet meet: Hot Spinach and Pesto

I’m saying it serves two because I ate half and was full.

Ingredients:
1 Can of spinach
2 Tbl spoons of pesto (I used canned pesto but homemade is much better)
1/2 Cup of Mozzarella cheese
1 heaping Tbl of Marinara sauce of your choice

Instructions:
Strain spinach from can in strainer leaving just a little juice.
***VERY IMPORTANT*** Do NOT rinse spinach as I think this would lose a lot more of the spinach’s flavor. Straining is to make a better consistency in dip.

Empty strained spinach into small sauce pan with heat on low.
Now stir in pesto and marinara sauce.
Let simmer for 3 mins covered with lid uncovering at 90 secs to stir and replace lid.
Finally add cheese of your choice. I chose mozzarella because it was the cheese I had. I wouldn’t use a chedder unless really mild. A brie if melted properly would be good so would pepper jack possibly.

Serve immediately! Nothing is worse than clammy green filled dips.

I got a package in the mail yesterday which contained the weirdest things.
Canned salsa, beef jerky, Puma brand socks, Aeropostale shirt, canned tuna and peanuts. Besides the fact the contents were weird it was postmarked as coming from Illinois and I KNOW that non of my connection in IL would send something like this nor did my grandma as I’ve already asked. It seems that it was sent from someone who used to know me as a few of the package contents meet my likings but from long ago. Very weird with no note or name above the address, but welcomed I suppose.

I also wanted to post a few pictures that my friend Michael that he just sent me.
Mike has been one of those friends like all of mine that I’ve take a little something from and grown in big ways. I’ve gained an appreciation for big dreams and making them happen from Mike. My resolution of adapting that trait from him was what pushed me to do my traveling last year and venture out west.
